What you'll need to make this sandwich
Your choice of bread. I like a good artisanal multigrain Avocado, sliced Toasted sesame seeds Cilantro Hummus (You can use any hummus but this one is excellent) Parsley, chopped A few radishes, thinly sliced 1 carrot, grated 1 beet, grated Cucumber, thinly sliced Spinach leaves Everything but the bagel spice Room temperature butter Assemble the sandwiches Preheat either a panini press or a flat griddle while you assemble the sandwiches. Spread some butter on what will be the outside pieces of your bread. Sprinkle a good amount of the everything but the bagel spice on each side and lightly press the spice into the butter. Flip the bread over and assemble the veggies. Spread some hummus onto one slice of your sandwich and smash some avocado onto the other slice. Sprinkle some of the toasted sesame seeds onto the avocado and then add a bit of chopped parsley onto that. Now layer small portions of the radishes, carrots, beets, cucumber and spinach onto the avocado side of the bread. Place the bread with the hummus on top and press down lightly. Place the sandwich in a panini press or onto a griddle. Heat both sides just until the bread is toasted and golden brown. You are not attempting the heat the veggies inside. Serve immediately.
Use the leftovercilantro hummus to dip any veggies you have left.
