Ingredients For the vinaigrette 3 cloves garlic, 1 1/2 tsp dried oregano 1 tsp dijon mustard 1/4 cup red wine vinegar 1 tsp salt 1 tsp black pepper 1/2 good olive oil Whisk the garlic, oregano, mustard, vinegar, salt and pepper in a small bowl. While still whisking, add the olive oil and make an emulsion. Set aside. For the Salad 2 cups cooked quinoa, cooled 1 cup crumbled feta cheese 1 cup marinated artichoke hearts, diced 1 cup diced cherry tomatoes 1 English cucumber, diced 1 red bell pepper, diced 1 yellow bell pepper, diced 1/2 red onion, diced 1/2 cup kalamata olives, diced 1/2 cup basil, chopped 3/4 cup hearts of palm, diced Combine all 11 ingredients in a large bowl. Done. Easy. Pour vinaigrette over quinoa-veggie mixture and combine well.
