1 1/2 lb ground turkey (you could use ground chicken if you like)
2 Tbsp red Thai curry paste
Salt and pepper
Vegetable oil, for the grill
2/3 cup mayonnaise
3/4 cup diced English cucumber
1/4 cup fresh cilantro, chopped
1 shallot, diced
2 Tbsp seasoned rice vinegar
4 Sesame seed hamburger buns
Prepare your grill to around 350 degrees. (you can also cook these on a griddle on medium-high heat).
In a medium bowl, gently mix the turkey, curry paste and 1/4 tsp each salt and pepper with your hands. Don't over mix. Form 4 patties about 3/4" - 1" thick.
Oil the grill grate. Grill the burgers for about 9 minutes, flipping once.
While the burgers are cooking, zest the lime into a small bowl then squeeze the juice into it. Mix in the Mayonnaise and 1/4 tsp salt.
In another bowl, toss the cucumber with the cilantro, shallot and vinegar.
Toast the buns on the grill until browned and heated through, 1 -2 minutes.
Spread the tops and bottoms of the buns with the mayo mixture. Place some sliced tomato on the bottom bun and top with the burger and then the cucumber mix.
