Ingredients
Pizza dough. Store-bought but homemade is always better 2 tablespoons olive oil 1/2 pound medium shrimp, peeled and deveined salt/pepper For the sauce 1 Tbsp olive oil 1 Tbsp minced garlic 1 Tbsp minced ginger 2 big teaspoons chili paste (sambal oelek) use more if you like it spicy 1/2 cup peanut butter 1 cup chicken broth, 3 tablespoons soy sauce 1 cup shredded mozzarella cheese 1/2 cup shredded parmesan cheese corn meal (optional for rolling out pizza dough) ​ For garnish - chopped peanuts and cilantro sprinkled over the top at the end. You could even top it with a few bean sprouts or red cabbage for added color, optional. Special equipment Rolling pin Pizza Stone Pizza peel Parchment paper (optional) Cook shrimp Make sure shrimp has been patted dry with paper towels Heat olive oil in a skillet over medium/high heat. Cook shrimp with salt and pepper for 3-4 minutes until just cooked through. Remove from skillet and dice into bite-size pieces. Set aside. Sauce In a small saucepan, heat the olive oil over medium heat and add the garlic, ginger and chili paste. Cook for about 2 minutes. Stir in the peanut butter, chicken broth and soy sauce. Stir everything until it melts together and becomes a creamy sauce, about 5 minutes. It should coat the back of a spoon. Preheat the oven to 500 degrees. Make sure your pizza stone is in the oven while it's heating. You want your pizza stone super hot when you cook your pizza. Working on a surface that has been sprinkled with cornmeal, roll out the pizza into a 12-inch-diameter round. (I usually skip the cornmeal part and just roll my pizza dough out on floured parchment paper. This makes it much easier for me to transfer it to the heated pizza stone with my pizza peel. The parchment can handle 500 degrees). Spread your sauce over the pizza dough, leaving a 3/4" border. You may not need all of the sauce, just enough to cover the dough. Sprinkle both kinds of cheese over the sauce. Using your pizza peel, transfer the pizza, with the parchment paper if you like, onto the heated pizza stone. Cook for 10-12 minutes until the cheese is bubbling and the crust has crisped up and is brown at the edges. Remove the pizza with your pizza peel. Quickly top the pizza with the diced shrimp, cilantro, peanuts and any other toppings you choose. This sauce can also be used over pasta. You could use the above ingredients and make a pasta dish.
