When I told my husband I was making him this particular sandwich, he gave me a weird look. "Trust me," I said, just wait. The saying, "Bacon makes everything better" is incredibly true and delicious with this combination. Just try it!!!!
Once he finished it, he said, "Oh no.... that was too good!" All you'll need is: Good peanut butter. I know you can do better than Skippy! This will work with any good preserve. I'm going for orange marmalade next time. Bonne Maman is going to be some of the best preserves you can easily find. Your choice of artisanal bread. Cooked crispy bacon. A panini press or griddle. optional. Heat oven to 400 degrees. Line bacon on a cookie sheet in a row and cook until bacon is crispy. Around 20 minutes. I used 3 pieces of bacon per sandwich. Let bacon cool on a few paper towels to absorb some of the grease. Make your sandwich. I like to place the bacon in-between the peanut butter and jelly. So PB on one slice of bread and Jelly on the other, bacon in-between. This is really good grilled. I heated my panini press and sprayed it with cooking spray and grilled it until the bread was crispy. Little tip: have the jelly side of the sandwich on the top if you're grilling it to decrease the chance of the bread becoming soggy. And, let it cool a bit before chowing down on this sandwich. That jelly gets hot! Give it a try. It's LEGIT!
