This is the quick and easy (cheater) salsa recipe that one of my bestie's mom makes when she doesn't want to get too involved with salsa making.
This is so ridiculously delicious with the perfect amount of heat, it could be a stand-alone salsa at any Mexican restaurant. There is just one item that you will need to keep in your pantry, La Costena Fire Roasted Whole Peppers. These are fire-roasted serrano peppers with onions and a bit of soy sauce. I now have a dozen cans. ​When added to a can of diced tomatoes, oh man, watch out. This makes for an impressive cheater salsa. Ingredients ​ 1 14 oz can of diced tomatoes 4 or 5 La Costena Fire Roasted Serranos from the can. Include some of the onions and some of the juice. 3 garlic cloves Handful of cilantro. 1/3 to 1/2 cup 1 tablespoon of white vinegar Salt and pepper to taste Put everything into a blender and blend for 20-30 seconds. Seriously, that's it.
