1 medium sized butternut squash, peeled and diced 1 yellow onion, diced 1 4 oz can diced green chilies 2 jalapenos, cored and diced 2 tablespoons olive oil 1 teaspoon cumin powder 1 teaspoon chili powder 1 teaspoon coriander powder salt & pepper 1 (15 ounce) can black beans, drained and rinsed 1/2 cup cilantro, chopped 1 cup fresh baby spinach leaves 1 cup of your favorite salsa 1 14 oz can fire roasted tomatoes 3 large tortillas; quartered (Use whole wheat or brown rice tortillas as well) 1- 1/2 cups shredded cheddar, pepper jack or monterey jack cheese Avocado slices for garnish Instructions
