Ingredients 1 lb ground turkey 2 Tbsp good Greek olive oil (or realistically, the olive oil you have on hand) 1 onion divided. 1/2 onion diced. 1/2 onion grated and squeezed of its liquid. 3 green onions sliced. Separate the light greens from the dark greens. 5 oz spinach 2 Tbsp chopped fresh dill 2 Tbsp chopped parsley 4 oz good quality Greek feta 4 buns of your choice, buttered INGREDIENTS FOR TZATZIKI 1/2 of a large english cucumber, unpeeled 1 1/2 cups plain full-fat Greek yogurt 2 large garlic cloves, finely minced 2 tablespoons extra virgin olive oil 1 tablespoon white vinegar 1/2 teaspoon salt 1 tablespoon minced fresh dill DIRECTIONS FOR THE TZATZIKI
Directions for burgers Heat a skillet over medium heat and add the olive oil. Saute the diced onion and the light portion of the green onions. Season with salt and pepper. Saute until tender, about 2-3 minutes. Add the spinich and season again with salt and pepper. Cook until spinach is whilted. This will happen quickly. Now remove the skillet from the heat. Stir in the dill and parsley. Crumble in the feta. Add the dark green portion of the green onions and mix this all together. Set aside. This will be the topping for your trukey burger. In a separate bowl, gently mix the turkey with the squeezed grated onion and season with salt and pepper. Do not over mix. Make 4 turkey patties. Heat a grill pan over medium heat and spray with a cooking spray. Grill the turkey burgers about 4-5 minutes on each side. Don't over cook these. Remove them from the pan and let them rest while you toast your buttered buns on the same pan. Assemble your burgers with the tzatziki on the bottom bun, the burger in the middle and top it with the feta spinach mix.
