Greek Chicken with Tzatziki

This Greek Chicken Marinade is delicious! 
It's up to you how you would like to serve it. This can be made into a wrap, burrito, salad or stand-alone chicken. It's up to you!

INGREDIENTS FOR CHICKEN MARINADE

• 4 tablespoons olive oil, divided
• 2 tablespoons freshly squeezed lemon juice
• 1 tablespoon lemon zest
• 1 teaspoon paprika
• 2 teaspoons dried oregano
• 2 teaspoons dried basil
• 1 teaspoon dried thyme
• 3 cloves garlic, minced
• 1 shallot, minced
• Kosher salt and freshly ground black pepper, to taste
• 2 pounds boneless, skinless chicken thighs

INGREDIENTS FOR TZATZIKI

• 1/2 of a large english cucumber, unpeeled
• 1 1/2 cups plain full-fat Greek yogurt
• 2 large garlic cloves, finely minced
• 2 tablespoons extra virgin olive oil
• 1 tablespoon white vinegar
• 1/2 teaspoon salt
• 1 tablespoon minced fresh dill

ADDITIONAL INGERDIENTS 

• cherry tomatoes
• red onion, thinly sliced 
• english cucumber, diced
• greek feta cheese
• kalamata olives
• bread or tortilla of your choosing. I like Indian parathas (obviously not greek). Naan, pita, tortilla, whatever you like.

DIRECTIONS FOR CHICKEN

1. In a medium bowl, combine 2 tablespoons olive oil, lemon juice, lemon zest, paprika, oregano, basil, thyme, garlic, shallot, 1 1/4 teaspoons salt and 1 1/4 teaspoons pepper.
2. Stir in chicken until well combined; marinate for at least 2 hours to overnight, turning occasionally. Drain the chicken from the marinade.
3. Preheat grill to medium heat.
4. Grill chicken, turning occasionally, until the chicken is completely cooked through, reaching an internal temperature of 165 degrees F, about 8-10 minutes.

​DIRECTIONS FOR THE TZATZIKI

1. Grate the cucumber and drain through a fine mesh sieve. Add a bit of salt to it to help pull out the moisture. Overnight in the fridge is best but we don't all have that much time to wait. So instead, just press as much water out of the cucumber as possible.  It will be a lot!
2. Combine the yogurt, grated cucumber, fresh dill, garlic, oil, vinegar, and salt in a large bowl. Cover and refrigerate overnight. 

You can serve the chicken and tzatziki on a platter with the rest of the vegetables, cheese and bread.  You can also turn it into a greek burrito. Use your imagination. The combination is delicious.
