For 4 servings
4 large sweet potatoes (yams people!!!) 1 lb ground turkey 3/4 lb of breakfast sausage or hot or sweet italian sausage. Casings removed. 2 large sweet onions 1/2 to 3/4 cup shredded cheddar cheese 1 tub of your favorite salsa like El Napalito Roasted Salsa or your favorite homemade salsa. No jarred garbage!!!! Your choice of seasoning to season the turkey and sausage. I use a mix of salt, pepper, paprika, garlic, celery seed, oregano and rosemary. Essentially a little of this.... a little of that..... Whatever you like. 2 tbsp of butter 2 tbsp of olive oil Heat the oven to 400 degrees. Wash the sweet potatoes and cook them until they are easily pierced with a knife about While the potatoes are cooking, begin to saute the onions in the butter and olive oil on medium-low for about 45 minutes stirring occasionally. Do not let them burn. You are caramelizing them to bring out their sweetness. Cook turkey and sausage on medium heat in a skillet until cooked through. Set aside until potatoes and onions are cooked. Once potatoes are cooked through, slice down the middle and season with salt and pepper. Top potatoes with meat. Pour a few tablespoons of salsa on meat and top with caramelized onions and cheese.
