This salad is really great. The first time I made it, I ate the whole thing and didn't share a single bite. To make a meal out of this add shrimp or chicken and just toss more Calabrian Chili Sauce on your protein when you cook it. You can find the chili sauce on Amazon and depending on whether you find paste or sauce, (the sauce is like a hot sauce) will dictate how much you use. Raw almonds are fine if you can't find smoked. Lightly toast them in a pan with some flaky sea salt. Ingredients
For the vegetables 3 heads, broccoli, cut into 1 inch florets 1 pound Brussels Sprouts, trimmed and thinly sliced 1/4 cup olive oil 1 teaspoon kosher salt For the salad 1 tablespoon lemon zest from 1 lemon 1 tablespoons freshly squeezed lemon juice 1/2 cup olive oil 1 tablespoon Calabrian chili sauce (2 tsp if you have paste) Add more or less to your liking. 2 tablespoons honey 1/2 teaspoon kosher salt 1 cup smoked almonds, roughly chopped 8-10 Medjool dates, sliced into rounds 2/3 cup, shredded pecorino or parmesan cheese Directions Heat your oven to 425. Chop three heads of broccoli into small pieces and thinly slice the brussels sprouts. Place the broccoli and brussels sprouts into a bowl and drizzle with 2 or 3 tablespoons of olive oil and 1 teaspoon of salt. Toss to incorporates the oil and salt. Line a large cookie sheet with parchment paper and spread the vegetables out on the sheet. Roast for 15-20 minutes, depending on how soft you'd like your veggies. Let cool once done cooking. Chop your dates into thin rounds and separate them so they don't clump together. If you have unseasoned or raw almonds, heat them in a small pan over medium heat for about five minutes and add some flaky sea salt to them. Give them a rough chop and set aside. Make the dressing In a bowl, whisk together the lemon juice and zest, honey, Calabrian Chili Sauce or paste, salt and the olive oil. Assemble the salad by putting the roasted veggies in a bowl. Toss veggies with some of the dressing (a few tablespoons at a time) and top with the almonds, dates and grated cheese. Add your protein if using. Enjoy!
