This is an incredibly easy recipe that is super delicious. This would also work well with cooked shrimp or noodles or couscous instead of rice. Be creative and use what’s at home. Ingredients 2 tablespoons peanut oil 1 yellow onion, chopped 2-3 garlic cloves, minced 1 tablespoon ginger, minced 1 tablespoon brown sugar 2 heaping tablespoons red curry paste. More or less as you like. 3 heaping tablespoons Jiff Peanut Butter 1 tablespoon chili powder 1 teaspoon sea salt 1 14 oz can unsweetened coconut milk 1 rotisserie chicken. You will want about 3 cups of shredded chicken. For garnish: Peanuts Lime zest plus juice Cilantro Chili oil Cooked white rice, noodles or couscous In a skillet, add peanut oil and heat to medium. Sauté your onion. Once the onion is softened, add the garlic, ginger, sugar and curry paste. Cook for 2-3 minutes. Add the peanut butter, chili powder, salt, coconut milk and shredded chicken. Stir well to combine and simmer for a few minutes until the sauce has thickened and is a nice consistency. Serve over rice. Garnish with lime zest and a squirt of lime juice. Add crushed peanuts, cilantro and chili oil if you like.
