Mushroom Puff Pastry with Goat Cheese

This is similar to my Savory Mushroom & Goat Cheese Tart but much easier because you're just rolling out puff pastry instead of making a dough.  

​Ingredients

• 1 sheet of puff pastry 
• 8-10 oz mushrooms (your favorite) quartered
• 1 shallot shallot finely chopped
• 3 garlic cloves minced
• 1 Tbsp fresh thyme
• 1 Tbsp fresh roughly chopped rosemary
• 1 tsp red pepper flakes
• 1 Tbsp olive oil
• 2 Tbsp salted butter
• 6-8 oz goat cheese at room temperature
• Honey to drizzle (use hot honey like Mike's Hot Honey if you like)
• Salt and pepper to taste  
• 1 egg, whisked for egg wash
• Flaky sea salt like Maldon salt
  
• This is optional - Everything but the bagel seasoning or sesame seeds to place on the pastry dough edges.

INSTRUCTIONS 

• Preheat the oven to 400F and prepare a large baking pan with parchment paper.
• Make sure your puff pastry is thawed completely before you roll out the dough a bit.
• Cut 4 equal squares and arrange them on the caking pan, separated by an inch or two. 
• Heat up the olive oil and butter in a large skillet on medium high heat and add the shallot and garlic. Sauté for 2-3 minutes then add the mushrooms, and the herbs and pepper flakes. Mix and cook for another 2 minutes. 
• Place dollops of goat cheese in the center of the puff pastries. Leave the edges clear. You will need to roll the edges in to create a little wall so the filling doesn't fall out.
• Pour generous scoops of the mushroom mix on top of the goat cheese.  You can pinch in the sides to create a little wall to form a bit of a fun design. If you do this, you can close them up any way you like but I always prefer two ways: pinching each of the four corners to make a curved edge on each side, or to only pinch in two of the four sides to make a boat-shaped looking tart. 
• Grab your whisked egg and add the egg wash over the top of only the bare puff pastry on all sides of each square (not over the filling). Sprinkle on some everything but the bagel seasoning or other seeds if you like. Bake for 15-20 minutes until the puff pastry is golden brown. Be sure to read the directions on your puff pastry box for times. Times can vary.
• Drizzle a bit of honey onto the hot pastries and a pinch of flaky sea salt if you like.
