Ingredients: 1 small red onion very thinly sliced 1 jalapeño also very thinly sliced juice of 6 limes 3 tablespoons apple cider vinegar 2 teaspoons salt 1 teaspoon sugar Directions: Squeeze the limes into an airtight container or jar. Add the vinegar, salt and sugar. Give it a quick stir. Add the onions and jalapeño and mix it well with the lime juice liquid. Place the lid on the container and let the onions marinate for a few hours before you add them to your favorite Mexican dishes. These are especially delicious on tacos!
