1 1/2 to 2 pounds of ground chicken (a mix of breast and thigh meat works best. You will most likely need to grind your own) or lean ground turkey 2 eggs, beaten 1/2 cup panko 1 teaspoon kosher salt, plus more to taste 1 1/2 tablespoons minced garlic, divided 2 teaspoons black pepper, divided 5 or 6 thick-cut bacon slices, chopped 12 ounces cremini mushrooms, sliced 1 large yellow onion, finely chopped 3/4 cup plus 2 tablespoons chicken broth, divided 1 1/2 tablespoons all-purpose flour 1 cup (8 ounces) dry white wine 2 tablespoons Dijon mustard 2 tablespoon fresh thyme leaves, plus more for garnish 1/2 cup heavy cream Serve with mashed potatoes, egg noodles or other pasta if desired.
